Tasting Notes:
"Twas the elf's dream to make a white Burgundy one day and in CA! This '21 is aging into a nice Burgundian style wine. Whoo hooo! She has well integrated oak that lifts the fruit. Aromas of tart star fruit and crisp melon. Showing nice pop of natural acidity and fruit concentration with a slight hint of hazelnut.
Notes of sunshine:
Grapes thrive in challenging conditions and '21 was, yes, challenging. There were some periods of heat and no rain that work 'em hard. The amazing vineyard this Chard is from channels cool night breezes through the Delta from the San Francisco Bay. With this the grapes could rest a little at night allowing them to gain depth and maturity similar to their French mama & papas.
Fun facts:
What started the Mouche project? The dream of making delicately rich style Chards with clean natural tartness. My first memory of tasting something that was ‘other world’ epic was in Paris. I was a student at culinary school and taking a class at l'Acadame du Vin. Some friends and I saved up to buy a 1978 Puligny-Montrachet "Les Pucelles", Pop, Wow, Chooooosh... the journey began.
Farm notes:
This vineyard is organically farmed by the best in the business. Winemaker and Farmer Guru, Elyse works super close to add the right amount of love, pruning and tight yields. She also reduces the number of grape bunches to intensify the flavors. Another hack is that she will taste the grapes sometimes a couple of times a day to make sure we pick at the right time.
Grape history:
There are always myths and fantastic stories that surround grapes and their origins. Let's tell a whopper about Chardonnay. The Roman's were quite thirsty with all that marching and conquering. So, back then they decided a marriage of a Roman white grape Gouais Blanc and the red grape Pinot Noir would cement their new relationship with ancient Gaul. Et voila`, we have Chardonnay. The most noble of all white grapes, producing the world’s most delicious and collectable white wines.

One common myth is that only red wines go with Cheese! The elf first debunked this in the late '80's after running out of red one night. We have been eating cheese and Chardonnay ever since.
