2022 Picpoul “Fresh”

Tasting Notes:

Wow! This organic Picpoul is as bright and fresh as ever! Pale straw in color, hints of kiwi and lime zest on the nose, lots of meyer lemon on the palate with a slight hint of fresh melon and VIBRANT acidity. This is a great party wine and will definitely appeal to those never drink whites. 

Notes of sunshine:

We discovered this amazing vineyard and started making single grape wines with it three years ago This has been the "elfs" most exciting grape find to date. It's perfect for summer and because of the farming has a wonderful expression of place. Imagine a Pinot Grigio or Sauvignon Blanc, but, only hmmmmm better. This is a Summer pool party in a glass! It's low alcohol, zesty light character dances over your lips.


Fun facts:

Play, playing, playful is who we are. We first made a batch of still Picpoul wine with the idea that we would blend it or use it for a great Pinot Grigio/SB substi- tute. We loved the tartness, depth and subtle, clean flavors and said; "Let's make it bubbly next year". So, we side stepped a huge chance to be normal and made it just like true Champagne. As my son would say "what the?". A year later voila la a whoopy loopy high styled porch quaffer has been born.


Farm notes:

This vineyard is organically farmed and by the best in the business. Farming responsibly and organic does something more… the elf believes that the added attention combined with the intention translates to yummier grapes. We carefully reduce the number of grape bunches per vine to reduce yields and concentrate flavors. Harvesting in the weeee hours of the morning when the grapes are cooler and the sun is not beating down brings the "fresh" to our Picpoul!

Why Organic?
This is a great question that we’ve thought a lot about. There are dozens and dozens of organizations that are certified organic around the world and somewhat less than “dozens” of people providing oversight. Organic is very important to us but practically speaking we are more interested in true responsible farming. With years of experience, we’ve seen that certified organic farms or grape growers are only as pure their own and their neighboring farm’s day to day practices. So, know your farmer, trust your farmer to make the best choices for the best outcome they can achieve in a very dynamic environment.


Grape history:

Picpoul has been around for centuries in Spain and France. It’s one of the earliest grapes grown in the Rhone Valley, France. For hundreds of years it has been used to freshen reds up and been made as a simple, light white wine. No one noticed the potential for this cool little white grape until recently! When loved and cared for and planted in the right conditions, it's magic comes through.

 


Recipe:

Tar’s Avocado Toasted Cumin Salsa

Makes approximately 6 servings

2 Avocado medium and ripe

2 tsp Organic Ground Cumin Toasted - (to toast place in a dry pan and over low to medium heat for 5-10min, keep it moving. If it burns start over with lower heat)

2 T top-quality organic olive oil

3-4 T Fresh Organic Lime Juice

3 T Fresh Organic Cilantro – Chopped (Optional)

Sea Salt to taste.

  1. Preheat oven to 3750.
  2. Halve Avocado lengthwise, optional; etch with a pairing knife in a diamond design inside and remove the silky green.
  3. Mince and smoosh the avocado.
  4. Mix all ingredients, taste, season and serve.

Great to dip/spread on fresh potato chips, tortilla chips, toasted artisanal bread or rice crackers.
